Hotel restaurant

The intimate high-vaulted Santoro restaurant serves modern Greek cuisine courtesy of award-winning chef Spiros Agious: sauteed squid with grass-fed tenderloin and Apiliotis wine reduction, gyoza filled with fava beans and Volaki cheese, and lamb fricassée with candied lemons and lime foam. There is an open kitchen and more of the same bleached and flowing black lava. Or enjoy light meals and cocktails by the pool; We love the cabins with a view of the sea. An exceptionally fresh yellowfin tuna sandwich and a very tender lamb burger are the highlights of the menu. Breakfasts are hearty five-course meals that change regularly so guests can try something new each day. Day one: Cretan pancakes with Xinomizithra cheese and thyme honey; day two: eggs benedict with a piña colada cocktail; day three: filled with spinach and fetateam captainkage…

hotel bar

The pool bar extends from the restaurant, with half facing the kitchen and the other half facing the infinity pool. Sit back to the sound of Greek jazz and enjoy a unique cocktail. Lounge 363 (above the restaurant) has a contrasting interior with elegant cream upholstery and sharp black volcanic stone. Located 363 meters above sea level, the view of the caldera from the terrace is more staggering than the bar's long list of wines and cocktails. Grace Rose's signature drink (created by connoisseur Spyros Efstathiou) is a heady blend of Billecart-Salmon Brut Rosé, Gray Goose vodka, lemon, raspberry and rose water; The other signature drink, the Grace Cocktail (created by the equally au fait Salvatore Calabrese) is a combination of Gray Goose pear, lemongrass, honey, mint and fruit juice, which is wonderfully refreshing in the heat. Chef Spiros Agious' appetizer list is delightfulRee- (salted cod roe) and starters with caviar, freshly shucked oysters, platters with cheese and cold meats and filling salads. Santoro and 363 Lounge regularly organize live music nights.

Door Dave Wu, epicurean word garland

When it comes to stunning views, there are places in this world that flout the rules of fair play. From the very beginning, they conquer the heights and force you to submit with an incredibly beautiful view. Some literally take your breath away with their high-altitude landscapes - Namaste,Bhutan! – while others convince you that you have moved to another dimension entirely. The latter is more or less what we felt when Mr. Smith and I first stepped onto the spacious terrace of the Grace Hotel and gazed upon the famous volcanic caldera.

The island is crescent-shaped and encloses a large blue lagoon that was formed thousands of years ago when devastating volcanic explosions caused the center of the island to collapse into the sea. Almost every vantage point along the high cliff, the inner edge of the crescent, is surrounded by masses of white buildings. In full summer it dazzles. Here and there, blue domes mark the chapel, while azure bands, visible from the narrow paths winding through the terraced buildings, invariably point to the hotel's swimming pool.

On Santorini, location is everything. Oía, a picturesque town on the northern tip of the island, has an abundance of tourists and streets filled with tourist buses. Thera, in the center of the island, is just as busy. Fortunately, Grace is a 40-minute walk from Thera in a quiet enclave of hotels (catering from low to high budgets). Here the illusion of seclusion is complete, especially when the morning fog covers the highlands.

But on the afternoon we checked in, Santorini lay before us in the majesty of Olympus, the gentle whoosh of the wind blowing over the Buddha bar's low tracks echoing from the stereo. Far below us in the caldera we saw three cruise ships circling the flat sapphire water like fat little whales. Charming silence hung over the blue sky.

It is a view that even four days later we will never tire of it. "I never want to leave here," I said at the end of the first day as we closed the blacked out thermal windows. And why would you use it? The Grace is one of those hotels that conspire to keep you happily trapped: if you've ever wondered what it's like to be a victim of Stockholm syndrome, this is the place to try.

The hotel's 20 rooms, gym, restaurant, library, pools and sun deck are terraced on the cliff side in a cascade of white walls and black buttresses. Inside, the rooms are completely covered in white and the floor is cool, polished gray concrete. The bookshelves, bedside tables and chairs are carved out of the rock, giving the room a very pleasant atmosphere of Francis of Assisi and the four seasons. Our bed is a large strip of white sheets floating over triple layers of coir and rubber mattress, all padded with layers of plump pillows; while the huge rain shower bathroom is stocked with eye-catching bath and body products from local Greek brand Apivita.

With an aromatherapy pillow ordered from the pillow menu, Mr. Smith at the view of the caldera through the slanted windows. "Maybe I should get goosebumps instead?" I wondered aloud, impressed by the seriousness of such Solomonic decisions.

And that was more or less the pattern of our time. When we weren't gently swimming in the heated outdoor jacuzzi, we lay on our backs under umbrellas next to lavender beds buzzing with lazy, fat bumble bees. The April weather was still a little too cold for diving in one of the two spectacular pools that extend on different levels. "Maybe we should stay until it gets really hot?" I suggested hopefully over a breakfast of Greek yogurt with nuts and flower honey and poached egg.

One morning, driven by an unusual surge of energy, we descended the wide donkey stairs past the resort, past the 15th century bijoux chapel, then climbed Scarpa, the irregular rock cliff that was once the capital of the island. it was destroyed by an earthquake.

Today, the drama of nature is entirely botanical. The rocks were adorned with yellow daisies and bunches of purple flowers. A gentle breeze swayed the sea below. We sat on a pile of shale and looked out over the Aegean Sea, assuming that the fabled city of Atlantis - long rumored to be based on Santorini - lay right there in the little hollow where a cruise ship now anchors.

It was also a bit surreal to think that Prince William was marrying Kate in London at the time. "I hope they're happy," I murmured, shielding my eyes from the glare of the sun. We sat in friendly silence. Seagulls flew across the land, and the wind carried the smell of grass and the coming summer.

A moment later Mr. Smith said, "Come on. It's lunchtime."
